Feeding the family

So much has happened in our boring little lives since last Thursday. Ben got his face re-broken. We had a fantastically dorky date night for our anniversary. I developed a wicked addiction to Real Estate Intervention on HGTV.

Despite all this, we are still cooking ahead. (except for tonight. tonight we ate at the mall food court. and last night. last night we went to Panera at like 4:45 because we are wild and crazy. and the night before last. the night before last, I took the kids to Pizza Hut while Ben ate some Percocet and dozed with a giant ice pack on his head. but besides those, um, 3 days of terrible choices, we're all about the healthy dinners) Here's what's on tap this week:

Monday:
Tearoom chicken salad. Here's how we make it:
* 1.5 pounds cubed boiled chicken-- you can use any kind of chicken, but I prefer boneless skinless breast
* a ton of sliced grapes (we use both red and green, but whatev)
* lots of diced celery
* 1/8 cup almond slivers (you can use more, but I'm on a diet)
* many diced green onions
* a huge squirt of yellow mustard
* 2/3 cup Miracle Whip (I heart mayo, but you could certainly use less, or more. I'm not going to judge)
(Ben and the kids will eat theirs on sandwiches, maybe with cheese, but I like mine on a bed of baby field greens. Also if you are not dieting, little tiny cinnamon rolls go well with this and make it feel more like something you'd eat at a tearoom)
Steam sweet potato strips

Tuesday
Pork chops again (this time BBQ)
Tossed salad
Steamed snap peas
Mixed berries (strawberries, blueberries, raspberries, and black berries, to be exact)

Wednesday
Salmon burgers again (what can I say? we like a routine)-- chipotle this time
Steamed asparagus
Steamed carrots (because we bought a ton of veggies this week because they LOOKED SO GOOD!)
Mixed berries

Thursday
Grilled chicken salad with baby field greens and a ton of other veggies
Corn on the cob
Blanched green beans with dill dip
Either mixed berries or sliced grapes

Friday
Harry and Jack are having Annie's organic cheeseburger helper with lean organic ground beef
Frozen veggies (cauliflower, broccoli, carrots)
Fruit (berries again? grapes? maybe clementines?)

I don't know. But I think I am motivated to think about it now!

Well, VBS takes care of lunch for AJU5 and me as well as dinner on Wednesday. I have no idea what we are eating other than that though! I am thinking chicken tonight and then beef tomorrow followed by pasta and pizza - but we will see...

I put together a lasagna to eat half of and give half away. I used a pack of turkey Italian sausages with the meat removed from the casings and browned in olive oil with a diced red onion, an orange bell pepper and a couple yellow squash, as well as some garlic and basil, oregano and anise seed and adash of red pepper. Then I added 2 jars of pasta sauce. I used a pack of uncooked noodles, the sauce, 4 c. mozzarella, 30 ounces of ricotta with parsley, parmesan and eggs. More detail than you wanted, I bet.
